Whole Stuffed Savory Squash

This dish is a delicious, seasonal crowd-pleaser!

    Step 1

    Preheat the oven to 350 degrees F. Cut the squash in half. Scrape out the seeds from the inside. Put squash on a baking sheet or casserole dish.

    Step 2

    Toss all the dry ingredients and stuff into the squash, saving the cream for last. Pour Stir the cream into the squash to moisten the ingredients but not make the mixture too loose.

    Step 3

    Cover with tinfoil and bake the squash for 1 hour, until everything inside is bubbling and the flesh of the squash is soft when pricked with a fork. You can bake an additional 15 minutes with the foil off to brown the stuffing.


  • 2 cups home-made bread crumbs 1/2-inch chunks
  • 4-6 oz of your favorite cheese
  • ½ cup dried cranberries
  • 2 crushed garlic cloves
  • 1/4 cup chopped scallions
  • 1/3 cup heavy cream (or nondairy version)
  • Salt
  • pepper
  • nutmeg to taste

    4 slices cooked crisp bacon chopped
  • 1 large winter squash (acorn or buttercup preferred)
