Whole Stuffed Savory Pumpkin

    Step 1

    Preheat the oven to 350 degrees F. Cut out the top of the pumpkin (like a Jack-o-Lantern). Scrape out the seeds from the inside. Put pumpkin on a baking sheet or casserole dish.

    Step 2

    Toss all the dry ingredients and stuff into the pumpkin, saving the cream for last. Pour Stir the cream into the pumpkin to moisten the ingredients but not make the mixture too loose.

    Step 3

    Put the cap in place and bake the pumpkin for 1+ hours, until everything inside is bubbling and the flesh of the pumpkin is soft when pricked with a fork. You can bake an additional 15 minutes with the cap off to brown the stuffing.


  • 1 pie pumpkin about 3 pounds
  • 2 cups home-made bread crumbs 1/2-inch chunks
  • 4-6 oz of your favorite cheese
  • ½ cup dried cranberries
  • 2 crushed garlic cloves
  • 1/4 cup chopped scallions
  • 1/3 cup heavy cream (or nondairy version)
