Easiest Kale Salad with Lemon & Olive Oil Dressing
A refreshing kale salad dressed with feta cheese and a bright lemon & olive oil dressing. The recipe creates almost 2 cups of salad dressing. Keep it in the fridge and use on steamed veg, potatoes, fish, chicken, pasta, etc.
What You Need To Make This Recipe

Pull kale leaves off the stems and discard the stems.

Wash & spin kale leaves

Cut lemons in half and squeeze for juice. Pour juice into glass jar.

Add an equal amount of olive oil to the jar, about 3/4 cup.

Finely chop 4-5 garlic cloves. Add to jar.

Add 1 tsp of salt and 1/2 tsp red pepper flakes to jar. Screw on lid and shake vigorously to mix.

Tear kale leaves into small pieces.

Pour about 1/8 cup of dressing (or any amount you prefer) onto kale leaves and toss.

Add about 2 tbsp of feta brine and 2 small wedges of crumbled feta to salad. (Feel free to substitute Parmesan if you prefer)
