Teriyaki Salmon Bowl

This meal kit makes a light and easy weeknight dinner full of flavor. Norwegian Salmon glazed with teriyaki sauce served atop seasoned rice, garnished with edamame beans, avocado, scallion, pickled red onion and lemon. Save 10% on all items when ordering them as a kit! Serves 4.

    Step 1

    Thinly slice the red onions and add to a jar with the red vinegar. Put lid on tightly and let sit for a quick pickle.

    Cook rice in a standard rice cooker (use 1.5x as much water to get a sticky rice consistency).

    Whisk rice vinegar, salt and brown sugar together and set aside. (can sub red wine or apple cider vinegar for rice vinegar)

    Thinly slice avocado, scallions and lemon.

    Steam shelled edamame beans in ½ cup water in a small stovetop pot for about 6 minutes to cook. Drain and set aside.

    Dice salmon filets into medium sized chunks.

    Heat olive oil in a skillet on medium-high, add salmon and brown on all sides. Then, add the teriyaki sauce and simmer to reduce the sauce so that it glazes the salmon chunks (about 3-5 minutes).

    Toss cooked rice in the vinegar/salt/brown sugar sauce.

    Fill a single serving bowl ½ way with seasoned rice and top with a generous portion of teriyaki glazed salmon, 2 slices of avocado, spoonful of edamame beans, pinch of pickled red onion, slice of lemon, spoonful of sliced scallion and garnish with sesame seeds.

  • 3 Tbsp Rice Vinegar
  • 1/2 tsp Salt
  • 1 tsp Brown Sugar
  • 1 pkg Shelled Edamame
  • 3 Whole Scallions
  • 1 Red Onion
  • 1/2 cup Red Vinegar
  • 1 Avocado
  • 1 Lemon
  • 1 Tbsp Olive Oil
  • 1 Tbsp Sesame Seeds (optional)
