Andy's Smash Burger

We've all seen "The Menu" and came out craving a smash burger. Here's our take on it, complete with special sauce. And no one needs to die.

  • Prep

    Step 1

    Prepare your toppings first so that they are ready to go as soon as the burgers are cooked.

  • Shred

    Step 2

    Finely shred half a head of lettuce.

  • Cut

    Step 3

    Cut onion into thin slivers.

  • Cut

    Cut the dill pickles into long, thin slices

  • Mix

    Step 5

    Make special sauce! In a blender, combine mayonnaise, ketchup, yellow mustard, 4 slices finely chopped dill pickle, 1 finely chopped garlic clove and a dash of your favorite hot sauce. Blend on high until smooth, scraping sides of blender with rubber spatula as necessary to ensure thorough blending. Transfer to airtight container. (Can be made ahead of time and stored in refrigerator for 5 days)

  • Toast

    Butter and lightly toast the buns on the griddle/grill. Move buns to a plate and add toppings to the bottom side of each bun: a generous swipe of the special sauce, dill pickle slice, onion slivers and shredded lettuce.

  • Balls

    Step 7

    Form raw ground beef into balls. Each beef chub should make about 4-5 balls. If you are using a grill, place the ball on a flat surface, cover with wax paper and use the palm of your hand, the base of a glass jar or spatula to smash the balls to a flat shape about 1/4 to 1/2 inch thick. Smashed patties should be slightly wider than the hamburger bun.

  • Grill

    Once griddle gets to about 425 place burger ball on griddle and smash using a metal spatula (Grill should be about 550; place already smashed pattie on grill). Season generously with salt and pepper. Cook for about 2 minutes until patties are well browned and tops are beginning to turn pale pink/gray.

  • Flip

    Step 9

    Use the metal spatula to carefully scrape the patties off the griddle/grill, flip, add cheese and cook for another minute.

  • Stack

    Step 10

    Stack 2 patties and then place them proudly on the prepared bun.

  • Serve

    Step 11

    Serve & enjoy immediately!
