Start with your potatoes since they take longer. In a medium pan, heat 1 tablespoon olive oil. Sauté diced potatoes until fork tender, for about 8-10 minutes. Season with a sprinkle of salt and chopped rosemary.
For the eggs, finely chop your spinach while heating a pan with 1 tablespoon olive oil and 1 tablespoon butter. Sauté onions for 3-4 minutes. Season with salt and pepper. Add the spinach and stir together. Add beaten eggs with a touch of cream (optional) and gently scramble together.
