The ciauscolo is a spreadable salami sort of similar to a country pate. his spreadable salame is made using lean shoulder, shank and lean belly then seasoned with vino cotto along with other spices. West Loop Salumi uses pork from local Berkshire Slagel Family hogs. Everything is fermented and dried slowly according to European traditions.
