Carrot-Apple Breakfast Muffins

Preheat your oven to 350 degrees and line your muffin pan with the muffin tins. In a large bowl beat the sugar, vegetable oil, and eggs. Add the vanilla and mix again.
In a separate bowl, sift the flour, cinnamon, baking soda, and salt. Sifting the ingredients prevents any clumps in the batter and helps to mix the dry ingredients together.
Gradually mix the dry ingredients with the wet ingredients. Gently fold in the carrots, apples, and nuts into the batter. Pour the batter into the muffin tins, leaving about ¼ -inch at the top to allow the muffins to rise. Bake for about 8-10 minutes or until a toothpick inserted in the middle comes out clean.
