Roasted Beet & Citrus Salad with Goat Cheese & Honey

It's savory, it's bright, it's tangy and sweet all at the same time! This salad is super easy to make and packed with anitoxidants, vitamins and most of all FLAVOR! Just add a pinch of salt and cracked pepper and you're ready to dine. Bon appetit!

  • Preheat

    Step 1

    Preheat the oven to 400 degrees F.

  • Trim

    Step 2

    Trim the top of the beets to leave about 1 inch; do not trim the root.

  • Wrap

    Step 3

    Wrap each beet individually in aluminum foil and place them on a sheet pan.

  • Roast

    Step 4

    Roast them for 50-60 minutes (depending on their size), or until a small sharp knife can easily be inserted in the middle.

  • Cool

    Step 5

    Unwrap each beet and set aside to cool.

  • Skin

    Step 6

    Peel the skin off of the beets and discard.

  • Slice

    Step 7

    Slice each beet to be used in this citrus salad.

  • Peel

    While beets are roasting, peel and slice your 3 grapefruits into small slices

  • Crumble

    Crumble goat cheese

  • Combine

    Combine sliced beets, grapefruit, goat cheese in mixing bowl, add 1-2 pinches of salt and pepper to taste, and drizzle with honey
