Roasted Beet & Citrus Salad with Goat Cheese & Honey
Ingredients:
6-8 Medium/Large Beets
3 Medium Pink Grapfruit or other Citrus
4oz Fresh Goat Cheese
3-4 tsp Honey
Salt and Pepper
Instructions:
Step 1: Preheat
Preheat the oven to 400 degrees F.
Step 2: Trim
Trim the top of the beets to leave about 1 inch; do not trim the root.
Step 3: Wrap
Wrap each beet individually in aluminum foil and place them on a sheet pan.
Step 4: Roast
Roast them for 50-60 minutes (depending on their size), or until a small sharp knife can easily be inserted in the middle.
Step 5: Cool
Unwrap each beet and set aside to cool.
Step 6: Skin
Peel the skin off of the beets and discard.
Step 7: Slice
Slice each beet to be used in this citrus salad.
Step 8: Peel
While beets are roasting, peel and slice your 3 grapefruits into small slices
Step 9: Crumble
Crumble goat cheese
Step 10: Combine
Combine sliced beets, grapefruit, goat cheese in mixing bowl, add 1-2 pinches of salt and pepper to taste, and drizzle with honey
