Easy Cheesey Stuff Squash Boats
Ingredients:
1 Large Seasonal Squash
2 Tbsp Olive Oil
1 Large Roma Tomato
2 Tbsp fresh basil finely chopped
1/4 cup Shredded Mozzarella
1 tsp garlic powder
Salt & Pepper to Taste
Any Additional Veggies or Cooked ground Meat you'd like to add
Instructions:
Step 1: 1
Preheat oven to 400 degrees.
Step 2: 2
Cut the squash in half lengthwise down the middle. Use a spoon to remove the seeds and center strings.
Step 3: 3
Drizzle both halves with olive oil and sprinkle with salt, pepper and garlic powder.
Step 4: 4
Place the squash, open side down on a cookie sheet and bake for 30 minutes.
Step 5: 5
Remove from the oven, check to see if the squash is soft and can be easily scraped with fork. If it’s still too hard to remove, cook for another 5-10 minutes.

Remove from the oven, leave the squash in the skin and scrape the inside with a fork if you are using spaghetti squash. If you’re using acorn or butternut squash, scrape out enough so there is plenty of room for your filling!

Turn the oven on broil.

Mix in diced tomatoes and fresh basil, as well as any additional veggies, cooked ground meat or spices you desire and top with the mozzarella cheese

Place in the broiler for 3-4 minutes, until the cheese is melted and slightly browned.
Step 10: 10
Cool for 5 minutes before serving.
