Pumpkin Walnut Pancakes with Honey Baked Pears

    Step 1

    Slice your pumpkin in half, remove and discard the seeds, and place in a baking dish, face side up with 1/2 cup of water. Roast in a 350 degree oven for 45-60 minutes or until tender. Scoop out the flesh into a large mixing bowl, mash until smooth, and add the pancake mix and ingredients listed on the package. Season the batter with orange zest and 1 teaspoon cinnamon. Mix in the walnuts.

    Start by melting 2 tablespoons of butter in the pan and pour the batter into the hot pan forming medium size cakes. Continue with the rest of the batter, adding butter to grease the pan as needed. Cook over medium flame for 2-3 minutes on each side.

    In a small sauce pan, heat the honey, 1/2 teaspoon cinnamon, 1 teaspoon vanilla extract, and orange juice. Bring to a gentle simmer. Pour the poaching liquid in a baking dish just large enough to hold the pears. Slice your pears in half but be sure to keep the stems intact. Using a melon baller, carefully remove the core. Place the pears in the dish, baste with the flavored liquid, top with 2 tablespoons melted butter and sprinkle with brown sugar and bake for 20-25 minutes. Be sure to baste the pears with the liquid every 6-8 minutes. Let them cool just a bit before serving.
