Tomato, Onion, Tofu & Egg Scramble

Tomato, Onion, Tofu & Egg Scramble. Up the protein content of your breakfast by adding some tofu to your eggs. Feel free to use this recipe as a base and add in your favorite veggies and herbs.

    Step 1

    Sauté tomatoes and onions in 1 tablespoon olive oil in a medium pan. Season with salt and pepper and add in the tofu

    Step 2

    In a small bowl, whisk together eggs. Pour the eggs over the veggies and the tofu. Gently stir the eggs and veggies together, lower the heat. Top with chopped basil

    Cook for 4-5 minutes, depending on how you prefer your eggs cooked.
