Vegetarian Stuffed Peppers

Vegetarian Stuffed Peppers. Seitan is a great meat alternative for this tasty stuffed pepper recipe. Feel free to substitute summer squash for the acorn squash in the warmer months!

    Step 1

    Heat a medium size pan with oil and sauté your onions for 5-6 minutes. Add in the diced squash and cook for another 4-5 minutes. Stir in the garlic, seitan, and beans. Season the pan with salt, pepper, and cumin.

    Step 2

    While these cook, place your peppers directly on the stovetop to char on all sides. Once the skins are blackened, place them in a bowl and cover to steam. Once cool, remove the skins.

    Step 3

    Stuff the mixture into the peppers and top with cheese. Pop these under the broiler for a minute or two until the cheese melts. You may also slice your peppers in half for more servings or to serve as a side dish!
