Heat a medium size pan with oil and sauté your onions for 5-6 minutes. Add in the diced squash and cook for another 4-5 minutes. Stir in the garlic, seitan, and beans. Season the pan with salt, pepper, and cumin.
While these cook, place your peppers directly on the stovetop to char on all sides. Once the skins are blackened, place them in a bowl and cover to steam. Once cool, remove the skins.
Stuff the mixture into the peppers and top with cheese. Pop these under the broiler for a minute or two until the cheese melts. You may also slice your peppers in half for more servings or to serve as a side dish!
