Sesame Tofu & Greens with Rice

Sesame Tofu & Greens with Rice. This simple stir fry can be thrown together quickly and can be adapted to use whatever vegetables you may have on hand.

    Step 1

    Cook 1 cup of rice in 2 cups of liquid. Once the liquid has absorbed in the pot, give the rice a stir, cover the pot, and lower your flame. Continue to cook for another 20 minutes.

    Step 2

    Meanwhile in a medium pan, heat the sesame oil. Add the onions to the pan and sauté. Toss in the garlic, stir, and cook for just 1minute. Add the greens, 1 teaspoon red pepper flakes and stir together over low heat. Add in the cilantro or basil and then chopped nuts. Cook the ingredients for just 1-2 minutes then remove it from the heat.

    Combine the cooked rice with the veggies in the pan. Drizzle with a little more sesame oil and soy sauce just before serving.
