These all-in-one meals are perfect for a week night dinner! You can cut the fat in this recipe by using ground turkey instead of ground beef.
Preheat your oven to 350 degrees. In a pan, sauté the ground beef. Season with garlic, onions, salt and pepper. Add tomatoes (or 1/2 cup of tomatoes sauce) and sweet potato. Put a lid on it and cook over low heat while you prepare your squash.
Scrub the squash clean and slice in half. Scoop out and discard any seeds (or roast for a snack later). Spoon your filling into your squash half and roast for 30 minutes. Feel free to drizzle with a little maple syrup before it goes in!.
