A great vegan recipe with no faux meat!
Heat your olive oil in a shallow pan and sauté your onions for 4-5 minutes over medium heat. Add the green peppers and cook for another 2-3 minutes. Stir in the garlic and cook for 1 minute. Season the pot with salt and pepper to taste. Add both mushroom varieties and the walnuts and continue to cook for 7-9 more minutes. Add in the BBQ sauce and cook until heated through.
Toast your buns under your broiler for 3-4 minutes. Scoop the Sloppy Joe mix on top and serve hot! Garnish with a few slices of red onion, fresh herbs or avocado if you like for another layer of texture.
