Veggie Pizza Bread

This is best made with San Marzano tomatoes. We typically have these in the summer during the height of tomato season. Regular slicing tomatoes can be substituted when these gems are not available.

    Step 1

    Season the tomatoes, eggplant, onions, and garlic with salt, pepper, olive oil, and 1 tablespoon chopped oregano. Roast on a baking sheet in a 375 degree oven for 20-25 minutes. Arrange on toasted bread pieces, top with grated mozzarella and pop back in the oven to melt the cheese.
