It's so easy to liven up a dish or salad with the wonderful spring herbs from our local farms. Try our friend Amy's Tarragon Vinaigrette mixed with your favorite grain such as brown rice or barley.
Amy's Tarragon Vinaigrette
Cooking Time: 5 minutes for vinaigrette; 1 hour entire dish
Ingredients:
- Grain:
- 2 cups brown rice, black rice or barley
- Vinaigrette:
- ¼ cup olive oil
- Juice of 1 ½ to 2 lemons
- 2 teaspoons salt
- Big handful of chopped tarragon (can also use dried)
- Sauteed Vegetables:
- Mixed vegetables such as zucchini, mushroom, pepper, squash, onion
- Big handful parsley, pinch of salt, pepper
Start cooking your rice or barley in water (double water to grain) in covered pot. Chop up your vegetables and parsley, add salt and pepper and sauté on low heat. Mix together the ingredients for the vinaigrette. When rice or barley is done, toss in vegetables and vinaigrette. Add more salt to taste if needed. Serve warm or cool for a great late spring and summer dish!
