Local spinach can be found this time of year from farmers who harvest it in greenhouses where it has grown over the winter. Here are some simple tips for getting this leafy green vegetable clean and keeping it fresh!

Proper Storing. You want to keep spinach at its freshest, not only for that great taste of a delicious spinach salad, but also to benefit from the highest content of vitamins and minerals that are antioxidant and anti-cancer agents. Spinach should be stored loosely packed in a plastic bag in the refrigerator and washed when it is being prepared for a meal.

Cleaning. To get all the sand and soil off the spinach take off the thicker stems by cutting them which can be quickest, or pulling them off. Soak the spinach leaves in a large bowl of water or a full sink and gently swish. Remove the leaves before draining the water, and repeat. If you are preparing spinach salad, you can dry the leaves in a salad spinner, pat with paper towel or shake in a colander.
